Never heard of a ‘skinny rib strip’ before but OMG, these are a revelation! Purchased at Truro market, cooked on the BBQ. Wasn’t quite sure how to treat them but think ‘belly pork’ (in beef form!) and cook to your liking. It’s not steak so render out the fat, get some MASSIVE flames going, slightly crisp the edges and the result is a beautiful, succulent beef rib with a taste to die for. I could eat these every day ��
