Later, we blended in a modest 3% component of the cherished Foxwhelp to amplify the cider’s acidity and red-fruit tones.’ The cider’s name is a reference to Beaujolais Nouveau, with its similarly vibrant, fruity flavours and low tannin, as a result of quick, wild fermentation of lovely, ripe fruit. Disco Nouveau is about encapsulating the unadulterated essence of the Discovery apple. Notes of strawberries- fresh and candied, with whipped cream. A beautiful creaminess to its texture and a light, refreshing sparkle. This is very versatile with food. It would generally make the perfect picnic accompaniment, but would also be lovely with dishes that offer a refreshing contrast, try with bright salads, or Thai flavours, such as pad Thai. Is Vegan?
