Description An orange wine (curtimenta) from Joao Tavares de Pina estate in Dao region, an elevated area in north central Portugal with an altitude of 550m, granitic soils and a south facing aspect. Although not certified organic, sustainable and organic practices are observed such as no till, grass cover cropping, no chemical applications. Flowers and herbs such as chamomile act as fungus repellent and other flowers’ pollen protect the vines in wet springs. Once harvested the grapes are sorted and de-stemmed and spend 2 weeks macerating on their skins in an open stainless steel tank. Fermentation is spontaneous with wild yeast. The wine spends 8 to 9 months in closed stainless steel tank on the lees with no stirring. The wine is co-fermented and unfiltered.
